Chicken Marinade ( let it marinade 1 day in the fridge)
8 chicken thighs
1/3 cup soy sauce
1 heaping tablespoon of brown sugar
4 garlic cloves minced
1 Tablespoon of Worcestershire sauce
1 Tablespoon of fresh ginger minced
Salad
1 (5oz) pkg Baby Spring Mix
1 avocado cubed
1/3 of slivered almonds toasted ( they only take 30 seconds to toast)!
1 cup of green grapes
2 roma tomatoes cubed
6oz of goat cheese crumbled
Balsamic and Olive oil dressing to taste
Salt to taste
Instructions:
Grill the chicken and cut in small pieces put aside. Layer salad with Baby Spring Mix first, then add the grapes, tomatoes, avocado then chicken and last add the crumbled cheese and slivered toasted almonds. Serve immediately or put in fridge until ready to serve. Remember that avocado goes brown when exposed to air, so either cover with plastic until you use it or put a bit of lemon if you are making the salad ahead.
