You will love this “One Bowl Recipe!” You can make small or large muffins and put nuts or not! It tastes delicious and it makes 24 large muffins or 12 regular and 24 mini muffins. Enjoy, share and freeze. When you have someone over just defrost a few, that way you are always ready.
 
Pumpkin muffins
 
1 can 15oz of pumpkin purée
4 large eggs
1 cup of butter room temperature (2 sticks)
1 1/2 granulated sugar
1/2 cup dark brown sugar
2 1/2 all purpose flour
1 1/2 teaspoons baking soda
3 teaspoons cinnamon
1 1/2 teaspoon ground ginger
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon salt
Put the first 5 ingredients in one large bowl and the rest in another bowl. I use an industrial large bowl and put the dry ingredients on one side and the wet with sugar on the other side. Then use an electrical mixer and mix the wet then adding the dry slowly.
After it’s all mixed use a tablespoon and place batter inside the large muffin pan with liners.
If you have liners use them and if not then with a brush to put a bit of oil on the muffin pan so they don’t stick or use the “Pam” spray. I did not have mini liners only the regular ones and it worked great.
Put the muffin pans in the oven to bake and it takes 15 minutes for the minis to cook and about 20 -25 minutes for the regular muffins to bake. Use a toothpick to check and if it comes out clean then they are cooked.
Also I don’t use a lot of sugar in my recipe, so if you think you would like it sweeter, you can add a bit of raw sugar to the top of the batter before you bake. It give it a really pretty look, enjoy.
Note: Use chopped walnuts in your recipe. Once I filled 12 muffins, I took the rest of the batter ( which was half of it) and added the chopped walnuts. They are my favorite!
I use a very large bows to separate the dry and the wet ingredients with butter.
